Cooking is something that I have a passion for because it comes from family. My grandmother is a great cook and my mother basically missed her calling as a master chef as far as I’m concerned. These women didn’t just make us dinner, they made us culinary experiences that turned into fond memories later in life. Cooking is something that always came so natural I didn’t even think to blog or make videos about it until some good friends of mine threatened physical harm if I didn’t start putting up my recipes. Baked Jerk Salmon and Shrimp with sauteed spinach and quinoa
This is one of those dishes that has a great taste payoff with little effort. Heat your oven to 350 degrees. Take your salmon filets and your favorite jerk season in a plastic bag and shake/coat. Coat a non-stick baking pan with olive oil and lay your fish on top. Bake uncovered in the oven for 15-20 mins depending on the thickness of your fish.
The shrimp is very easy as well. Make sure to pat your shrimp dry first. Then sprinkle a small amount of the jerk seasoning over your shrimp. Put some olive oil and a pat of butter in a skillet. Not a lot, just coat the pan. When the oil/butter is hot, add the shrimp. They will cook through in about 2 mins.
Pair with your fav sides like spinach and quinoa and walah! GOOD EATS!
